Our Croquembouche cakes are made with toffee and we need to make these cakes in the morning of the day of pick up or delivery, as the toffee does melt and the cake can’t be made any earlier (such as the day before). It is best to keep these cakes refrigerated for as long as possible.
The minimum size croquembouche we make is 75 profiteroles to fit the mould we build the cake on. The price includes silver or gold covered board, some handmade sugar roses (colour of your choice) or edible numbers for a birthday cake, ribbon, large packaging box and your choice of either chocolate custard or vanilla custard filled profiteroles coated with either toffee or chocolate. Depending on your number of guests, you may like to order extra profiteroles and keep them separate (or can be place under the croquembouche tower). Please keep in mind that you may also need extra profiteroles, as you will loose some when breaking them apart on the tower (though we do add a few extra profiteroles to the tower, at no charge, for this reason)
